Basic Brown Bread, WK# 21

Here we are, nearly halfway through the year-long baking/blogging challenge. After the last two baking challenge fails, I decided to take a step back and try something more basic. Hence, the Basic Brown Bread. Plus, the photograph in the cookbook did me in.

For this challenge, I also wanted to recreate the picture but I just found out we are out of tomatoes so I’ll have to wait to do the picture tomorrow. However, I do have some photos I can share with you now.

I did substitute ONE ingredient but Denene Wallace (co-author of the The Joy of Gluten-Free, Sugar-Free Baking cookbook) told me that I could do this one substitution if I was ever in a pinch. I didn’t use hazelnut flour, I used almond flour instead. I was out of hazelnut flour. So I think this is why the bread isn’t as brown as it is supposed to be. Still, it tastes GREAT.


And while we didn’t have any tomatoes today, I did have some swiss cheese and pepperoni and so I toasted that up on this slice. Delicious!


I think this is a very safe recipe to start off with if you are new to using alternative flours and/or if you are nervous or skeptical of gluten-free, sugar-free baking. I promise, you’ll love it.

So, basically, just mix up all the dry ingredients and set aside. Then mix up all the other ingredients; eggs, melted butter, soy milk, water and then add this mixture to the flour mixture. I knew I was going to be safe this week when the batter turned out the way it did, like it was supposed to turn out. It was just right. I was able to POUR it into the loaf pan and then put it in the oven.

The house smelled SO GOOD while it was baking. YUM! The Gent approves too. 🙂 Oh, and don’t forget to enter this month’s cookbook giveaway; only one more week to go before I shut it down for March.
