Lemon Drop Cookies, WK# 22

Oh, y’all… do you want a quick and easy recipe for Lemon Drop Cookies? Not only are these cookies super easy to make, they are also Gluten-Free and Sugar-Free. Yes, we are on week number 22 of my year-long baking and blogging challenge. I am using The Joy of Gluten-Free, Sugar-Free Baking cookbook for this project.

These Lemon Drop Cookies came out perfectly delicious!

I did a couple of things differently, technique-wise that is. When I measured out the almond flour and dumped it into the bowl, this time I took a whisk to it and got the lumps out. I use Bob’s Red Mill almond flour. I don’t know of any other kind. If you know of some other brands, let me know in the comment section. I don’t have a problem with Bob’s Red Mill, at all. I just noticed that the almond flour can be a little clumpy but nothing too outrageous and unmanageable.

After I whisked the lumps out, I then added all the other dry ingredients. Once I put everything all together and had it ready for mixing, I decided to use my KitchenAid mixer. Normally, I mix everything by hand. But I wanted to see if I could smooth out the texture a little more.

Instead of rolling the dough out by hand to make little balls, I decided to use a scoop. Hey, today was one of those days I didn’t want to get my hands dirty. I’m weird like that from time to time. Ha! So I used my Pampered Chef small scooper. Worked like a champ.

So mainly, those were the three techniques I did differently this time. The Lemon Drop Cookies were a big huge success in my house!
