Onion-Cayenne Crackers, Week #18

This is my second round with making crackers from The Joy of Gluten-Free, Sugar-Free Baking cookbook. The first time was when I made Rosemary Crackers and that post can be found on my old blog at Blog Fifty. I should probably move all those baking posts over to this blog at some point.

At any rate, this week I made Onion-Cayenne Crackers. Doesn’t that combination just scream deliciousness? Well, it did to me.

Normally I am not one for spicy foods but I decided to live on the wild side; the recipe calls for 1/2 a teaspoon to one full teaspoon of cayenne pepper, depending on your preference for heat so I put in the FULL teaspoon of cayenne pepper. 🙂 I am glad I did.

You are supposed to get anywhere from 36 to 42 crackers out of the recipe. I counted mine this time and I got 40 crackers. I had to roll out the dough an additional two more times. That’s a good thing.

This time, with this batch of crackers, I learned to roll out the dough a little thinner. The first time I made the Rosemary Crackers I didn’t trust myself enough and didn’t get them thin enough, in my opinion. But this go ’round was perfection!

The crackers are good by themselves but you can also get creative and add toppings. The Joy of Gluten-Free, Sugar-Free Baking cookbooks lists a wide variety of additional toppings for the baking process.

But for me, after they were all done baking and cooling down, I decided to eat my crackers with pepperoni & cheese as well as creamy spinach dip.

The crackers are super easy to make and calls for readily available ingredients. It takes no time at all to bake these crunchy treats up.
