Simple Pretzels, WK#26 My Year-Long Weekend Baking Challenge

So finally! PRETZELS! I’ve been so nervous to try this one. I don’t know why. I reckon because it called for three different types of flour and I had to roll it out and shape them myself. The thought of the process intimidated me a little bit so I am glad I waited until I was half way through with my year-long weekend baking challenge to try it. I have gained some confidence with my baking skills in doing this challenge.

I had to grind up sesame seeds to make flour. And the fact that I felt comfortable doing this is amazing to me! The recipe calls for almond flour, sesame seed flour, and sunflower seed flour. Isn’t that awesome?!

I used a Mr. Coffee coffee bean grinder to make my sesame seed flour. I bought Mr. Planter’s sesame seeds (without the shells of course) and simply ground them in the grinder.

Oh, before I forget… this is funny …. ha … it also called for butter flavored sprinkles and so I thought that I had picked up butter flavored sprinkles the other day, placing it my grocery cart. However, when I reached for it today for my baking challenge I noticed it was CHEESE flavored sprinkles. WHAT?! But I didn’t let it phase me one bit, I went ahead and USED IT. Yes, I did. And you know what? The pretzels still came out great!

Rolling out the dough into strips is what I was worried about but they turned out great! I even had fun doing it once I got the hang of it. The key to rolling these out is not to apply too much pressure and to do it with one hand. I noticed that when I used both hands I had the tendency to pull the dough apart because my hands wanted to naturally part from each other as I rolled the dough. I wish I had gotten a picture or a video of me doing this.

I have to say, I am impressed with the way the pretzels turned out. I am proud of myself for tackling this week’s baking with enthusiasm and resolve.

So that’s it. There are variations of the Simple Pretzel in the cookbook. I am looking forward to trying those as well.
